    Strawberries & Cream Delight: Well, strawberry season has officially arrived and I just had to put a quick, easy, no bake recipe together featuring this delicious berry. They can be used in so many different desserts, so I wanted to experiment with one that won’t have you stuck in a hot kitchen all day.

    Strawberries & Cream Delight: Well, strawberry season has officially arrived and I just had to put a quick, easy, no bake recipe together featuring this delicious berry. They can be used in so many different desserts, so I wanted to experiment with one that won’t have you stuck in a hot kitchen all day.

    You’re going to need a mixer of some sort to create the cream. I have an awesome KitchenAid Mini Mixer that my boyfriend, Jarod, gifted me last year. Now, I look for any excuse to use it! I honestly don’t know how I got by without this kitchen staple for so long. Ok, that sounds a bit dramatic, I obviously survived, but now I can’t imagine my life without it!

    If you don’t have a stand mixer, don’t worry you can use a handheld. If you don’t have a mixer at all, you could also buy some good ol’ fashioned cool whip and save yourself some time instead of making the whip cream on your own.

    You could also change things up further by using different cookies. I went with the mini nilla wafers, but have fun with it and use whatever you like!

    Ingredients

    • 3 Cups Strawberries (Plus Extra For Garnish)
    • ¼ Cup Sugar
    • 3 Tablespoons Triple Sec or 3 Tablespoons Water
    • 2 Cups Heavy Cream
    • ½ Cup Powdered Sugar
    • 15-20 Mini Nilla Wafers or Cookie of Your Choice

    Instructions

    1. Rinse the strawberries and chop them up into small pieces. The smaller the better for mashing later.
    2. Dump the sugar and triple sec in the bowl with the chopped strawberries and mix. Let sit for at least 15 minutes to allow a red syrup to appear.
    3. While you wait for the strawberries pour the heavy cream into a mixing bowl. Use your stand mixer and begin blending the powdered sugar into the heavy cream.
    4. Once the whip cream has stiff peaks it’s ready for the strawberries!
    5. Using a large plastic spoon start mixing the strawberries into the whip cream. The more juice you have the more pink it will look.
    6. Next you can start serving. I used rather giant milkshake glasses, but you can use whatever dish you like. Top with any extra strawberries and cookies of your choice.
    7. Enjoy immediately!
