I’m excited to be kicking off 2019 with more recipes and meal ideas here on my blog. I’ve recently been asked to collaborate with Jones Dairy Farm to promote their sausage patties that are sold at Kroger stores across the US. They are full fat, protein packed and low carb, these all-natural pork sausages fit perfectly into a Keto, Whole30® or Paleo diet. Contains no MSG, preservatives, artificial ingredients or added sugars. I found them at my local Ralphs to bring you this perfect Saturday morning breakfast sandwich spread.

When asked to showcase their sausage patties I knew immediately I wanted to create breakfast sausage biscuit sandwiches with them. On a recent visit to Seattle for the holidays my brother John had made us breakfast one morning and used biscuits to make sandwiches for us. As the main cook in our household it's a rare occasion that someone else makes me breakfast. That kind of gesture sticks with me! So thank you to my brother John for the inspiration for this recipe and thanks for making me breakfast!

That’s the thing I love about food. It almost always has a story to tell. It can bring back memories of a special moment in time and that’s why so many foods are called comfort food. So here is the perfect comfort food breakfast experience that’s super easy to make!

Breakfast Biscuit Sandwiches
(Serves 2)
Ingredients:
4 Jones Dairy Farm Sausage Patties
2 Slices Of Colby Jack Cheese
2 Pillsbury Biscuits of Your Choosing
2 Large Eggs (Fried or Over Easy)
Breakfast Add Ons (Optional):
Grapes
Hash Browns
Directions:
To start you will want to bake the biscuits. The ones I used took about 16 minutes. Once they’re golden brown take them out of the oven and let them cool while you prepare the rest of the ingredients.
Next I put the hash browns in the oven. These ones required 18 minutes of cooking time until they were golden brown.
When there are 11 minutes left on the hash browns heat up your non-stick skillet and cook the frozen sausage patties for about 12 minutes. This allows the hash browns to be done cooking and begin cooling while you finish cooking.
For the last step I cook the eggs. I think it’s best to save these for last because they cook quickly. I made mine over easy which can be done by cracking an egg into a small bowl. Then slowly poor the egg into a non-stick skillet to keep the yolk intact. Place a lid on top of the skillet to help cook the top of the egg. I usually cook mine for about 2 to 3 minutes on low. If you prefer your eggs fried you can flip it over halfway through cooking. A lid is not needed for fried eggs.
Once everything is done cooking assemble your biscuit sandwiches by cutting a biscuit in half and layering with the cheese, egg and sausage patties.
