Remember the recipe for delicious San Diego Taco’s I shared with you the other day? Well, as promised I’m going to teach you How To Make Guacamole And Pico De Gallo From Scratch so you can incorporate them into your next Mexican feast!
Now a really awesome trick I picked up from one of my many Pioneer Woman Cookbooks is to make your Pico De Gallo first and then use part of it as the mix ins for your Guacamole. It’s such a great way to make both items fresh without a ton of extra effort. Both are so delicious I could honestly eat them as a meal on their own! When I’m “sampling” them to make sure the flavors are just right I have to stop myself from eating too much before dinner.
If you want to go the extra mile, sometimes I make crumbled bacon and add cotija cheese to the guacamole to make a “loaded” version. Fact is, no matter how you decide to make it, fresh guacamole and pico de gallo are always a great appetizer, dip or topping.
How To Make Guacamole And Pico De Gallo From Scratch
*Serves 4*
Ingredients:
For The Pico De Gallo:
3 Roma Tomatoes
½ A Small Onion (I use pre-diced from the store because I HATE chopping onions)
1 Jalapeno Pepper
½ Cup Cilantro
½ Lime
½ Lemon
Sea Salt To Taste
For The Guacamole:
2 Avocados
½ Cup Pico De Gallo (Or More To Taste)
½ Lime
½ Lemon
Sea Salt To Taste
Directions:
- Start by making the pico de gallo. Chop the jalapeno, tomatoes and onion into very small pieces. If you want a spicier pico de gallo leave the seeds in the jalapeno.
- Next you will want to chop up the cilantro being sure to remove any stems. Place all of the ingredients in a bowl to combine.
- Squeeze ½ a lime and lemon over the mixed ingredients. Add the sea salt to your liking and stir again.
- Once the pico de gallo is prepped you can start on the guacamole. Cut the avocados in half length wise and remove the pits. Using a spoon, scoop the avocado onto a plate.
- Use a fork to begin mashing the avocados. It’s ok to leave it a bit chunky. Sprinkle with the sea salt and add the pico de gallo. Mix it all together and top it off with the other halfs of the lemon and lime. Mix it all together and you are ready to dig in!
